Exploring The Turkish Kitchen - Konya’s famous Okra soup (Bamya Çorba) I came across this lady preparing bamya for one of the most popular dishes in Konya. Traditionally made with small dried çicek (flowers). The ends of bamya are very gluey, so they are cut off and left to dry in the sun. Next step is to crush them finely with mortar (known as havan in Turkish) and pestle and mix the powder with water to get a gluey paste. This paste is used as a thickener for other sauces and for famous Bamya Çorba. So colourful and full of life behind the elaborated Okra soup. Afiyet olsun! – Enjoy your meal!
